Extreme wines
The extreme wines are "heroic wines", sons of toil, sweat, and human working; are produced in areas often unknown, geographically inaccessible, sometimes with grapes grown in small plots of land in the mountains, rocks and sea. This kind of viticulture is now protected and promoted by Cervim (Centre of research, study, coordination and enhancement for mountain viticulture), an international organism has identified the following criteria: soil slope up to 30%; altitude over 500 meters; viticultural systems on terraces and steps; viticulture of small islands. The Italian extreme wines are defined in nine areas, from Trentino-Alto Adige region to Valle d'Aosta, from Valtellina to Pantelleria, from the slopes of Etna to the Cinque Terre, from the Amalfi Coast to Sardinia. They are varieties that, thanks to the tenacity and passion of some winemakers, were torn from the oblivion and are still able to produce extraordinary wines.
