Vin Santo
There are different theories about the origin of the name : the most accepted attributes its origin to a Franciscan friar, who in the ' 300 cured plague victims with a miraculous wine. Enologically speaking , Vin Santo belongs to the classification of withered wines or wines of " straw " because the grapes used to produce it , as well as on the mats or hung on the " penzane " can be held to dry on straw . The Vin Santo is produced from grapes which vary with the location , but among the most suitable grapes to make Vin Santo are: Trebbiano toscano, il Malvasia del Chianti, il Canaiolo bianco, il Pinot bianco o grigio, il Sauvignon e lo Chardonnay, although the vines recipes can vary. Depending on the production area , there are three types of Vin Santo: Vin Santo del Chianti , Vin Santo and Vin Santo di Carmignano Montepulciano.
