Dessert Wines
Sweet wines can be classified in some main categories. We have the natural ones made with aromatic grapes as the "brachetto" and "moscato" to whom the fermentation is stopped for increasing the sweet and sugary flavour. Then we have the late harvest wines, these are the wines with an high concentration of sugar that covers the acidic part of the product. The "passiti" are the one made with grapes withered or on the plant or on wickers after the harvest. There are also the muffati (moulded): their grapes undergo a mould attack that intenify the amount of sugar in them. At last we have the "vini liquorosi" realized by adding alcohol or grape must.
