Straw Wine
The straw wine is a sweet wine made by wine grapes harvested later than normal harvest and made wither. The grapes intended for drying are left on the vine longer to make sure that the water to evaporate, and that the concentration of sugars nell'acino is greater. The harvest for sweet wines is done in October, rather than in August-September, but sometimes in November or in December, even up agennaio, when the berries are frozen as in the case of Eiswein, ice wines.
