The history of gelato is rife with myths and little evidence to substantiate them: the pleasure to enjoy an ice cream is old at least three thousand years old and its birth is uncertain. The origin of the ice cream as an Italian product is recognized in the whole world, but it was its introduction in France that made its famous throughout Europe. The Arabs in Sicily Etna snow used to stir the juices, creating that could be considered the ancestor of our artisanal ice cream; later, in 1686, the Sicilian Francesco Procopio, who moved to Paris, inaugurated the "Café Procope", which still exists, where created a new recipe for making sorbet-ice cream using fruit, honey, sugar and ice. The ice cream has become definitely one of the most widespread and famous desserts in the world thanks to the goodness and genuineness of the ingredients (milk, cream, sugar and flavored with puree of dried fruit or other flavors). The artisanal gelato always brings Italian food traditions around the world.
