Fresh Cheeses
Fresh cheeses are those soft cheeses (often creamy and tender texture) as the Bel Paese, the growth or the Crescenza, whose curd, besides to not being subjected to firing, was not even subjected to curing but only aging for less than 30 days. These cheeses contain at least 80% water and never have the crust or only a thin skin. The fresh cheese is then a product whose perishability times are very short and the consumption takes place within a few days from processing. There is also the category "super fresh" (also called a rapid maturation) which includes those cheeses with a short maturing process within two weeks (24-48 hours in the case of the mascarpone). A PDO Italian cheese that falls into this category is Squacquerone di Romagna.
