Patisserie
The bakery is a part of the culinary art, dedicated exclusively to the preparation of sweet foods such as stuffed pasta, pastries, cakes, cookies, pralines, chocolates, candies and the like. The pastry shop is an art that belongs specifically to European culinary traditions and the traditions that have sprung from it, like the American or Creole. From the middle of the sixteenth century it begins what will be shaped like a revolution in taste. Countries such as Spain, France, England begin the exploration and exploitation of territories initially known as the Indies, that only after a few years to be realized, however, the Americas. Hence Europeans carry many ingredients entirely new, including cocoa intended to find a place of absolute importance in the modern bakery. Inside the Italian pastries, many are the chocolate-based creations, resulting very often in imaginative variations on traditional recipes. Examples are the famous Sicilian cannoli, which may be included in their chocolate variants for both the filling - made with chocolate cream or chocolate spread made - both for the dough, sometimes made itself through the use of cocoa. Same goes for pasticciotti, muffins, puffs and hot chocolate souffle at heart.
