Meat-based Risotto is one of the typical preparations, widespread in the whole centre and north regions of Italy, and the reasons of this are all linked to the geography of the territory on one hand, and to the culinary traditions on the other. When we talk about risotto or rice-based dishes, the paring that we can do with meats are many and various, and there is a lot to say about it. Italian people really love the Risotto with "ragù", that in Italian cuisine is a meat-based sauce (independently made from white or red meats) and in the northern Italy regiond it tipically uses minced, chopped or ground meat, cooked with sauteed vegetables.The Ragù Risotto originally was a very poor dish, in armony with old habits of Italians who don't like to waste their food and prefer to re-use all the leftovers from the day before to cook and experiment something new. Right after the Ragù Risotto, we also have to mention the Risotto dishes pared with all knds of game, such as quail, pigeon and so on. All the meat-based risotto dishes, taste even better if shaded with some good Italian wine, which gave the dish a final touch of perfect taste.
