Biscuits
Biscuits are an ancient recipe, characterized by strong presence of honey (originally) or the sugar (more recently) and are completely baked in the oven: two characteristics that made them storable for long periods. Biscuits are usually made of flour, egg, butter, sugar, yeast and possibly ammonia and various herbs. The word biscuit comes from the Latin "Bis Coctum" or baked twice. In fact, originally they consisted of bread slices, cooked twice in the oven in order to make them more crumbly, crunchy and durable over time. Of course, with the evolution of the culinary knowledge and the mutual trade, which introduced new ingredients, biscuit’s recipes were enriched with sesame, chickpeas, cheese, and sweetened with raisins, figs, honey. Among the first cookies can be included waffles, whose producers in Europe (England, France ..) already in 1270 gathered in a guild. This kind of biscuits was obtained by crushing a batter between two hot irons, which gave rise to the filled wafers, or better, to those biscuits that we call today WAFER. The biscuits experienced a spreading among the 1800 Bourgeoisie, as an accompaniment to unique drinks such as tea, hot chocolate, or dessert wines.
