Panini filled with fish, shellfish and crustaceans - also jointly called "the taste of the sea" - may seem like a rather unusual choice to those who are desirous of keeping the contacts with tradition and, for this reason, would rather prefer to taste classic fillings – which have been discussed elsewhere (cured meats, ham, sausages and meats). Of the same opinion are also the Michelin starred chefs of Italian cuisine: it was Gualtiero Marchesi, in a recent interview, who called to mind the "terrific rolls" of his childhood, stuffed with braised beef, gammon, roast, foiolo (stewed tripe) and meatballs in tomato sauce. However, treated in various forms, the fish also acts as an excellent accompaniment for various types of bread and dough - sometimes giving them a more "gourmet" touch - and often is considered an healthier/low-calories variation of the counterparty with the meat. In Veneto region, sardines and cod fish are typically eaten on toast or as a filling of classic sandwiches (in this case, the padding also consists of mayonnaise or pink sauce, cheese and pickles). In Apulia region, the panini filled with octopus, which is cooked on the grill and simply dressed with extra virgin olive oil, salt and black pepper, as well as to enhance the full flavor; as regards the choice of bread, it is preferred the usage of Rosetta bread, with a crisp crust.
