The roasted term indicates a cooking method suitable to different kind of meats: beef, pork, chicken and turkey are the most common. A good roast not requires a long cooking time and if is high quality meat should never exceed two hours. A long cooking roast is required only with poor cuts of meat, rich of collagen, that with the heat become more tender (for example stews and braised). Among the most famous dishes is undoubtedly the roast veal with potatoes.
