Sorbetto
The sorbet is a frozen dessert made from sweetened water with flavouring (typically fruit juice or fruit purée, wine, liqueur or, very rarely, honey); it is considered the progenitor of the ice cream. Sometimes confused with the granita and with the kneaded, it differs from these for its consistency, most similar to the ice cream. The existence of the sorbet is documented in the classical texts of antiquity. In this context it is considered relevant the invention of a fisherman from Aci Trezza, a small village in the north of Catania, in Sicily, who created the first prototype of the ice cream machine, using the mixture of salt and snow of Etna, but it was his nephew Francesco Procopio who at the beginning of the seventeenth century brought to Paris the ancestor invention, creating the first coffee in Europe (Le Procope) and the ice cream industry.
