Ham steak
The steak ham was designated as "Prodotto agroalimentare tradizionale" or traditional food product. Is produced using the hind leg of swines that are boned, salted and baked. Salting is made using a particular water-based solution or salt solution that consists of salt, aromas (rosemary, garlic, macis, juniper berries, coriander), glutamate, niters, ascorbic acids and sugars. After salting meat is baked in steam ovens for 9-12 hours, according to the weight of meat. There are also two different kind of ham: roasted ham and herbs ham. Ham steak is diversified in three distinct categories: high quality steak ham, chosen steak ham and steak ham.
